Waffles and Caramel Syrup
Here's an easy recipe for waffle batter which I use in my Belgium waffle iron purchased at Costco.
Waffle Batter
2 C. milk
2 C. all purpose flour (Sometimes I use one cup white, one cup whole-wheat flour.)
1/3 C. oil
2 eggs
1 T. baking powder
1/2 tsp. salt
2 T sugar
Beat just until flour is incorporated. There will still be small flour lumps. Cook according to waffle iron instructions. The rather large amount of oil helps the waffles not stick to the iron. This recipe makes about 4-5 round Belgium waffles.
Caramel Syrup
(This is a variation of buttermilk or magic syrup.)
2 C. of brown sugar (You can use white sugar for a less caramel like flavor.)
1 C. of 2% milk, cream or half-half
1/2 C. butter (one stick)
Juice from 1/2 lemon optional
Zest from 1/2 lemon optional
1 tsp. vanilla extract
Bring all ingredients except lemon and vanilla to a simmer. Remove from heat and add lemon juice, zest and vanilla extract.
