Soft Sandwich Bread and Rolls


Combine in KitchenAid mixer or bread machine on "dough" setting the following:
1 T instant yeast
1 3/4 C plus 2T lukewarm milk any kind (I sometimes use water.)
6 1/4 C (28oz) unbleached bread flour
2 tsp salt
5 1/2 T sugar or 1/4 C honey or agave nectar
6 T vegetable oil or melted unsalted butter
1 egg

Allow mixer to knead for 15 -20 minutes. Put in refrigerator covered with oiled plastic wrap over night. The dough will expand in the frig and need to be punched down. The dough may be used without chilling overnight, but it will not develop the same flavors as chilled dough. Form into 2 loaves or a jelly roll sheet of your favorite for of rolls.
Bake at 350F for 20 minutes, unless you have a convection oven then bake at 325F.
