Texas Sheet Cake

2 C.  all-purpose flour
2 C. sugar
1/2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
1 tsp vanilla
6 T cocoa powder
2 eggs
1/2 C buttermilk (or 1/2 C milk with 11/2 tsp vinegar)
1 C melted butter
1 C boiling water (this blooms the cocoa and makes it taste better)

Melt the butter and mix in cocoa until smooth.  Add water and vanilla. When cooled slightly add flour, sugar, cinnamon, salt, soda, and buttermilk.  Beat eggs separately then add to the mixture. Pour into greased jelly roll pan (cookie sheet). Bake 350F for 20-25 minutes.
