Tangzhong

 Take 10% of total weight in flour and multiply by five to calculate the amount of water. Simmer together until gelled. Cool before adding to remaining ingredients especially the yeast.


Simmer together:

3 oz bread flour

14 oz water

Add remaining:

4 oz water

25 oz bread flour

1 T yeast

6 T oil

1 egg

2 tsp salt

1/4 C sugar

Cool tangzhong before adding to yeast.
