Lemon Chia Seed Muffins

Makes 12 muffins
Ingredients
1 C coconut flour
1/2 tsp salt
1 tsp baking soda
1/2 C + 2 T honey
1/2 C canned coconut milk
1/2 C fresh squeezed lemon juice
2 T lemon zest
6 eggs
4 tsp vanilla extract
1/4 C coconut oil
1/4 C chia seeds
Instructions
1. Preheat oven to 350F. Line muffin pan with paper cups.
2. Sift coconut flour, salt, baking soda into a bowl.
3. Combine honey, coconut milk, lemon juice, lemon zest, eggs, coconut oil, and vanilla.
4. Add chia seeds to bowl with honey and mix on low. Let mixture sit for 10 minutes while chia seeds hydrate.
5. Pour wet ingredients into dry ingredients and mix well.
6. Spoon batter into greased cupcake papers.
7. Bake @350F for 25-30 minutes until golden brown and thoroughly baked.
