Flax Seed Meal Waffles w/ a Little Chia Thrown In
Be bold and daring when you're trying to be low carb. Yes, you will mess up, but give the mishap to the birds if that happens. Here's a modification of a standard waffle recipe I used for years. I fixed it to be lower carb. I know that whole wheat flour is not as low in carbs as almond flours or pure flax seed meal, but sometimes you just want to splurge.
Waffle Batter
2 C. milk (3/4 C water and 1/4 C cream could be a substitute)
2 C. whole wheat flour (combine flours/meals like flax seed meal, almond flour, or Brazil nut flour)
1/3 C. oil
2 eggs
1 T. baking powder
1/2 tsp. salt
5 drops of sucrolose
Chia seeds (optional)
Beat just until flour is incorporated. There will still be small flour lumps. Cook according to waffle iron instructions. Sometimes I sprinkle 1 tsp of chia seeds on top of the waffle batter before lowering the waffle iron lid. The rather large amount of oil in the batter helps the waffles not stick to the iron. This recipe makes about 3-4 round Belgium waffles.
