Harvest Brownies or Pumpkin Cake in a Jelly Roll Pan
I bid on the cake during the 2000 Cub scout cake
auction. It cost me $40 and I think it
was really worth it. Marilee Olson gave
me her recipe for it and I have been frequently baking it ever since. Thanks, Marilee.
2 C. pumpkin or squash
4 eggs
¾ C. oil
2 tsp. vanilla
2 C. flour (optional:
try using 1 C. whole wheat flour as one-half of the flour)
2 C. sugar
1 T. pumpkin pie spice (I use 1 scant tsp. of the following:
nutmeg, cloves and ginger.)
2 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
½ tsp. salt
Combine and
bake at 350 F for 20-25 minutes in a 10 x15x1 jelly roll pan.
Frosting
6 T. butter
3 ounces cream cheese
1 tsp. vanilla
1 tsp. milk
1/8 tsp. salt
2 to 3 C. powdered sugar
