Hersey’s Chocolate Cake-High Altitude Version


Jennifer Nelson acquired the high-altitude recipe for this lovely chocolate cake.  I snagged it through my sister-in-law, Janelle Hillyard. 
1 ¾ C. sugar
1 ¾ C. plus 2 T. flour
¾ C. cocoa
1 ¼ tsp. baking powder
1 ¼ tsp. baking soda
1 tsp. salt
Beat together for 2 minutes:
 1 C. plus 2 T. milk
½ C. oil
2 tsp. vanilla
Add 2 eggs and combine with dry ingredients.
Add 1 C. boiling water to batter
Bake for 30 minutes at 375 F in 9 x 11 pan.

Frosting for Hersey’s Chocolate Cake
6 T. butter (optional:  4 T. butter, 2 T. cream cheese)
½ C. cocoa
1/3 C. milk
1 tsp. vanilla
1/4 tsp salt
4-6 C. powdered sugar
