A Better Dutch Baby
America’s Test Kitchen is awesome. This is a photo of the Dutch Baby we made using their recipe. It had already begun to deflate.
Dry Ingredients
1 3/4 C all purpose flour
3 T white sugar
1 T lemon zest
1/2 tsp salt
1/8 tsp nutmeg
Wet Ingredients
1 1/2 C milk
6 eggs
1 1/2 tsp vanilla
Mix the wet and dry ingredients together. Melt on medium low heat 3 T butter in a non stick 12” skillet. Pour batter in skillet and place in a cold oven. Bake at 375F for 30-35 minutes.
Apple Topping
1 1/4 lb apples, cored and peeled (1/2” wedges)
2 T butter melted in skillet
1/3 C water
1/4 C brown sugar
1/4 tsp cinnamon
1/8 tsp salt
Simmer apples in the above ingredients for 5 minutes with a lid on the skillet. Remove lid and simmer to reduce juices 5 minutes.
